Choose Happy by Enjoying the Drive

Image
Welcome Back--this is week 9 of the #ETHANproject challenge. This week's topic is Enjoy the Drive!   Perfect timing for this theme as we are heading up to Lake Superior for a weekend of camping!  Lake Superior is one of my FAVORITE places on earth. I have been road tripping there since I was a little girl!     Off we go.... The car is packed to the gills! Supporting the Children's Miracle Network with a mini blizzard at Dairy Queen!  Getting silly .... Gorgeous sunset ... My best advice for Enjoying the Drive with children:  1. Bring snacks & drinks from home. The less you have to buy on the road, the better! It will be much cheaper too! 2. Use the rest room at every stop if you have to go or not. This will help with having to make extra stops.  3. Bring enough color books, notebooks, books so that the children have their own to use during the ride. It keeps them quiet & they use their imaginations!  4.  Bring headphones! If the...

Choose Happy by Enjoying Something New

Image
Welcome Back--this is week 8of the #ETHANproject challenge. This week's topic is Enjoy Something New!   Thursday, we received our first Hello Fresh box. I had received a coupon from my cousin, so I thought we would try it! My husband was quite leary when we got the box, as he thought the price was a bit high. But after cooking our first meal with approval & applause from the children, we will definitely be trying it again!  The box came right to our door step on ice. Each meal is packed in it's own individual bag with the meat/protein in the bottom of the box with the ice packs. The ingredients are all pre-portioned, fresh & delicious.  Tonight's meal was Steak Lettuce Wraps. The meal took us about 45 minutes to prepare with easy to follow directions.  The kids asked questions as they ran in and out from playing outside. My daughter ate lettuce wraps with the rest of the ingredients as we finished cooking the steak & ...

Date Weekend

Image
.date weekend. It's Tuesday...and I am wishing I was still on date weekend with my hubby! We had such a wonderful weekend together!  Early last week, my mom emailed me to see if they could take the kids for the weekend, I quickly responded with a loud: YES! I couldn't remember the last time we had a date weekend! The planning commenced... We started our Friday evening with dinner & drinks at a new restaurant in Stillwater called Lolo American Kitchen . It was absolutely delicious! I can't wait to go back & try more items on their menu! We started with yummy drinks -my favorite Mojito in a long time. I had the Korean BBQ Tacos with homemade parmesan tator tots- Can I say YUM! My husband had the Surf & Turf burger topped with lobster! Dinner was eventful with a power outage as our pesto crostini appetizer arrived. It didn't bother us, as we still had plenty of light coming in from outside. The servers & open kitchen didn't seem bothered by it either, t...

Choose Happy by Enjoying the Sounds of Summer

Image
Welcome Back--this is week 7 of the #ETHANproject challenge. This week's topic is Enjoy the Sound!  After taking thousands of photos on vacation last week, I didn't take a single fun photo of my children this week. Instead, we just enjoyed being home again!  Some of our favorite sounds from this week...  //Sounds of laughter as they ran & played in the sprinkler at their grandma & grandpa's house.  // Even more laughter as we watched the Minion movie on Tuesday night in the theater. They laughed hysterically when the Minion walked out in the thong underwear. They think the silliest things are funny! //Silence. Again, after 10 days in the car with loud children, moments of silence when they are in bed this week have been a godsend! Some evenings, I have read, worked out, blogged or went to bed early! //The car stereo!  We LOVE dancing in our seats & belting out the tunes on our car rides! My kids know more lyrics to songs than I do...
